I have to include this recipe first as I have made this for my family at least 10 times! My son loves this and wants it in his regular dinner rotation! Love love having the BBQ chicken in tacos, on top of nachos, or with rice and veggies. It’s SO good!
Cheese, meat, rice – oh yes! Please find me a kid that wouldn’t eat this. This Mexican Brown Rice bake is perfect with a salad on the side or simple steamed veg.

“Meatless Monday’s” are becoming the norm, especially as people want to cut down on their meat intake and go with a healthier option. If you want to hide some veg in there, finely chop or grate in (carrots and zucchini are perfect for this) and the picky eater will never notice.

This recipe is one of mine. Once I had my homemade Marinara sauce ready to go in the fridge these stuffed peppers were super fast and easy to whip together. Simply bake the peppers in the oven, then stuff and put a little cheese on top for some extra comfort.
